Cranberry Orange Muffins


* 2 cups flour
* 3/4 cup sugar
* 1 teaspoon baking powder
* 1/2 teaspoon baking soda
* 1/2 teaspoon salt
* 1 cup cranberries
* 1 egg
* 3/4 cup orange juice
* 1/4 cup vegetable oil
* 1 teaspoon grated orange rind


1.Combine dry ingredients
2. Stir in cranberries
3. Beat egg, orange juice, oil and orange rind
4. Add to dry ingredients all at once
5. Stir just to moisten
6. Spoon into greased muffin cups
7. (fill 3/4 full)
8. Spring tops lightly with a bit of sugar
9. Bake 400F 15-20 mins until lightly browned and firm to the touch

Baked Eggs

It’s a great meal for breakfast or brunch.

The best thing about this recipe is that you can change the ingredients depending on your guess and cravings.


  • 1/4 cup and 2 teaspoons sliced fresh mushrooms
  • 1/4 cup and 2 teaspoons chopped onion
  • 2 tablespoons and 1-1/4 teaspoons butter,cubed
  • 6 eggs
  • 1/4 cup and 2 teaspoons all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt
  • 5/8 (16 ounce) container small curd cottage
  • cheese
  • 1 cup and 3 tablespoons shredded Cheddar
  • cheese
  • 1 /4 cup and 3 tablespoons shredded Colby cheese
  • 5 ounces pork sausage, cooked and drained
  • 3 table spoon of Grated Romano Cheese
  • Garlic (to season)
  • Black Pepper (to season)
  • Italian Seasoning (to season)

1. In a skillet, saute garlic, mushrooms and green pepper in butter until tender.

2. In a mixing bowl, combine eggs, flour, baking powder and salt if desired; mix well.

3.  Add mushroom mixture.

4. Stir in remaining ingredients; mix well.

5. Pour into a greased 13-in. x 9-in. x 2-in. baking dish. Bake, uncovered, at 400 degrees F for 15 minutes.

6. Reduce heat to 350 degrees F; bake 25-35 minutes longer or until a knife inserted near the center comes out clean.

Quick Oats w/ Cinnamon & Raisins

This recipe has saved me money.

It has helped with but my sweet tooth.

It’s a recipe that I’ve used for years and have changed along the way.

Everyone’s style of Oatmeal is different. I have several dozens preference myself.

This is one of them.

Oatmeal w/ Cinnamon & Raisins.


  • ½ cup of Quick Oats
  • ¼ cup water
  • ¾  cup Soy Milk (Vanilla Flavor)
  • ¼ cup Raisins
  • 1 tsp Dark Brown Sugar
  • 1 tsp 1 Natural Sugar Alternative
  • French Vanilla Extract
  • Pure Ground Cinnamon
  • (crushed nuts like walnuts also work well)


1. Pour Quick Oats into a bowl

2. Pour ¼ cup water and ¾ cup soy milk into the bowl

3. Add a small drop of French Vanilla Extract and stir

4. Add ¼ cup raisin and nuts if desired

5. Add 1 tsp of Dark Brown Sugar & Sugar Alternative and stir

6. Add as desired cinnamon and stir

7. Put in the microwave for a minute and 30 seconds, stirring at least once around 45 seconds

8. When finished stir again and add a little more Soy Milk to cool it off

Yesterday, I didn’t have to go to work. I decided to take a picture of the things I are to give you an idea of that this pregnant woman eats. I have to say it the past few months I have eaten more than I have in the past few years.
